INGREDIENTS
5-7 c. One minute Oats
1 c. Wheat germ
1-2 c. Shredded sweetened coconut
1 c. Sunflower seeds roasted
.5-1 c. Walnuts *
.5-1 c. Pecans unsalted *
.5-1 c. Almonds unsalted *
.25 c. Vanilla
.5 c. Local Honey
.25 c. Vegetable oil
.25 c. Brown sugar
1 tbs Cinnamon
1 c. Raisins or mixed berries
1 c. Dried cranberries
.5 c. Dried pineapple *
.5 c. Dried Apples *
- – Chopped fine with a knife
Instructions
Mix oats, wheat germ, coconut, walnuts, pecans, almonds, sunflower seeds, in a huge bowl.
Combine vanilla, honey, oil in a cup and heat together in microwave until very warm.
Pour stirring liquid mix into grain/nut mixture in bowl. Thoroughly blend.
Put parchment paper on two shallow pans. Spread bowl contents evenly in pans. It can be thick.
Heat oven to 300 and bake granola mix for 7-10 minutes take out and stir/turnover. Return and bake another 7-10 minutes, do not let it burn or get too brown.
Put baked granola back in bowl, add cinnamon, brown sugar and raisins, cranberries, dried apples, dried pineapple while mix is still hot and combine.
When cool put in storage containers.
You can add any chopped fruit or nuts you like, prunes, blueberries, mango, banana chips, etc. to suit your taste. If you want it sweeter add more honey or brown sugar. I like fruit, but you can reduce it if you don’t. I’m trying a cup of Kamut wheat in it next time. I have also added Quinoa and Amarantha also, which I baked before adding to the granola.
